Ingredients:
- 4 (6 oz / 170g) boneless, skinless chicken breasts
- 1 tsp (5g) kosher salt
- 1/2 tsp (2g) black pepper
- 3 tbsp (42g) unsalted butter
- 2 tbsp (30ml) pure maple syrup
- 8 fresh sage leaves
- 3 cloves (9g) garlic, smashed
- 1 tbsp (15ml) olive oil
Instructions:
- Pat the chicken breasts completely dry with paper towels. Note: Wet meat steams instead of searing.
- Use a meat mallet to pound the thickest part of the breast until the entire piece is an even thickness.
- Season both sides generously with salt and black pepper.
- Heat olive oil in a 12 inch cast iron skillet over medium high heat until it shimmers and just begins to smoke.
- Place chicken in the pan and sear undisturbed for 5-7 minutes until a deep golden brown crust forms.
- Flip the chicken and sear for another 5 minutes.
- Reduce heat to medium. Add the butter, smashed garlic, and fresh sage leaves to the pan.
- Drizzle maple syrup over the chicken once the butter foams and sage becomes crispy.
- Use a large spoon to continuously baste the chicken with the bubbling butter for 2-3 minutes until the internal temperature reaches 165°F (74°C).
