Ingredients:
- 1 cup (240ml) shredded zucchini, unpeeled, excess moisture squeezed out
- 1 large egg
- 2 tablespoons (30ml) olive oil
- 1/4 cup (60ml) unsweetened applesauce
- 2 cups (240g) whole wheat flour, or oat flour
- 1/4 cup (30g) rolled oats, finely ground
- 1 teaspoon baking powder
Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the egg, olive oil, and applesauce. Add the shredded zucchini and mix well.
- In a separate bowl, whisk together the whole wheat flour, ground oats, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be slightly sticky.
- Lightly flour a clean surface. Roll out the dough to about 1/4-inch thickness.
- Use cookie cutters (or a knife) to cut out desired shapes.
- Place the biscuits on the prepared baking sheet. Bake for 20-25 minutes, or until golden brown around the edges.
- Let the biscuits cool completely on the baking sheet before serving to your furry friend. They should be nice and crunchy when cool.
