Ingredients:

  • 1 cup (240ml) shredded zucchini, unpeeled, excess moisture squeezed out
  • 1 large egg
  • 2 tablespoons (30ml) olive oil
  • 1/4 cup (60ml) unsweetened applesauce
  • 2 cups (240g) whole wheat flour, or oat flour
  • 1/4 cup (30g) rolled oats, finely ground
  • 1 teaspoon baking powder

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the egg, olive oil, and applesauce. Add the shredded zucchini and mix well.
  3. In a separate bowl, whisk together the whole wheat flour, ground oats, and baking powder.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be slightly sticky.
  5. Lightly flour a clean surface. Roll out the dough to about 1/4-inch thickness.
  6. Use cookie cutters (or a knife) to cut out desired shapes.
  7. Place the biscuits on the prepared baking sheet. Bake for 20-25 minutes, or until golden brown around the edges.
  8. Let the biscuits cool completely on the baking sheet before serving to your furry friend. They should be nice and crunchy when cool.
