Ingredients:

  • 1 ½ cups (150g) graham cracker crumbs
  • 5 tablespoons (70g) unsalted butter, melted
  • 3 tablespoons (36g) granulated sugar
  • Pinch of salt
  • 1 (14-ounce/397g) can sweetened condensed milk
  • ½ cup (120ml) Key lime juice
  • 4 large egg yolks
  • 1 teaspoon Key lime zest
  • Optional: ¼ teaspoon green food coloring
  • Optional: Fresh whipped cream for topping

Instructions:

  1. Combine graham cracker crumbs, melted butter, sugar, and salt. Press firmly into the bottom of each mini muffin cup. Chill for at least 1 hour.
  2. Preheat oven to 350°F (175°C).
  3. Bake the crust for 5-7 minutes, or until lightly golden. Let cool completely.
  4. Whisk together sweetened condensed milk, Key lime juice, egg yolks, and Key lime zest until smooth. Stir in green food coloring, if using.
  5. Fill each cooled crust with the Key lime filling.
  6. Bake for 10-12 minutes, or until the filling is set but still slightly jiggly in the center.
  7. Let the bites cool completely at room temperature, then chill in the refrigerator for at least 2 hours before serving.
  8. Top with whipped cream, if desired, and serve chilled.
