Ingredients:
- 1 ½ cups (150g) graham cracker crumbs
- 5 tablespoons (70g) unsalted butter, melted
- 3 tablespoons (36g) granulated sugar
- Pinch of salt
- 1 (14-ounce/397g) can sweetened condensed milk
- ½ cup (120ml) Key lime juice
- 4 large egg yolks
- 1 teaspoon Key lime zest
- Optional: ¼ teaspoon green food coloring
- Optional: Fresh whipped cream for topping
Instructions:
- Combine graham cracker crumbs, melted butter, sugar, and salt. Press firmly into the bottom of each mini muffin cup. Chill for at least 1 hour.
- Preheat oven to 350°F (175°C).
- Bake the crust for 5-7 minutes, or until lightly golden. Let cool completely.
- Whisk together sweetened condensed milk, Key lime juice, egg yolks, and Key lime zest until smooth. Stir in green food coloring, if using.
- Fill each cooled crust with the Key lime filling.
- Bake for 10-12 minutes, or until the filling is set but still slightly jiggly in the center.
- Let the bites cool completely at room temperature, then chill in the refrigerator for at least 2 hours before serving.
- Top with whipped cream, if desired, and serve chilled.
