Ingredients:

- 3/4 cup (180g) Plain Greek yogurt
- 1 tbsp (15ml) Olive oil
Instructions:
- Combine the flour, baking powder, and salt in a large mixing bowl.
- Stir in the Greek yogurt until a shaggy, clumped dough forms, mixing just until the flour disappears to avoid overworking the gluten.
- Turn the dough onto a floured surface and divide into two equal portions.
- Use a rolling pin to flatten each piece into a 1/4-inch thick oval rustic shape.
- Heat olive oil in a skillet over medium-high heat until the oil shimmers.
- Lay the dough in the pan and cook for 2–3 minutes per side until the surface is dotted with golden-brown bubbles and the edges are firm.
