Ingredients:

  • 2 cups (250g) All-purpose flour
  • 1 tsp (5g) Baking powder
  • 1/2 tsp (3g) Salt
  • 3/4 cup (180g) Plain Greek yogurt
  • 1 tbsp (15ml) Olive oil

Instructions:

  1. Combine the flour, baking powder, and salt in a large mixing bowl.
  2. Stir in the Greek yogurt until a shaggy, clumped dough forms, mixing just until the flour disappears to avoid overworking the gluten.
  3. Turn the dough onto a floured surface and divide into two equal portions.
  4. Use a rolling pin to flatten each piece into a 1/4-inch thick oval rustic shape.
  5. Heat olive oil in a skillet over medium-high heat until the oil shimmers.
  6. Lay the dough in the pan and cook for 2–3 minutes per side until the surface is dotted with golden-brown bubbles and the edges are firm.
