Ingredients:
- 9 cups Rice Chex Cereal
- 1 cup high-quality white chocolate chips
- 1 tbsp virgin coconut oil
- 0.5 cup freeze-dried raspberries, pulverized into powder
- 1 cup powdered sugar
- 2 tbsp red velvet cake mix
- 0.25 cup Valentines Day sprinkles
- 0.5 cup pink M&Ms
Instructions:
- Place the freeze dried raspberries in a blender or food processor and pulse until they become a fine dust. Note: Sift through a mesh strainer to discard the seeds.
- In a medium bowl, whisk together the pulverized raspberry powder, 1 cup powdered sugar, and 2 tbsp red velvet cake mix.
- Pour 9 cups of Rice Chex into a massive mixing bowl, making sure there are no broken pieces at the bottom.
- Combine 1 cup white chocolate chips and 1 tbsp coconut oil in a microwave safe bowl.
- Microwave for 30 seconds, then stir thoroughly. Cook 30 seconds more until silky and smooth. Note: Do not overheat or it will clump.
- Drizzle the melted chocolate over the cereal. Fold gently with a spatula until every piece is glistening.
- Divide the chocolate coated cereal into two large zip top bags.
- Pour half of the raspberry sugar mixture into each bag and seal them with plenty of air inside.
- Shake the bags for about 1 minute until the cereal is evenly pink and matte.
- Toss in the 0.25 cup sprinkles and 0.5 cup pink M&Ms. Shake gently one last time to distribute.
