Ingredients:

  • 9 cups Rice Chex Cereal
  • 1 cup high-quality white chocolate chips
  • 1 tbsp virgin coconut oil
  • 0.5 cup freeze-dried raspberries, pulverized into powder
  • 1 cup powdered sugar
  • 2 tbsp red velvet cake mix
  • 0.25 cup Valentines Day sprinkles
  • 0.5 cup pink M&Ms

Instructions:

  1. Place the freeze dried raspberries in a blender or food processor and pulse until they become a fine dust. Note: Sift through a mesh strainer to discard the seeds.
  2. In a medium bowl, whisk together the pulverized raspberry powder, 1 cup powdered sugar, and 2 tbsp red velvet cake mix.
  3. Pour 9 cups of Rice Chex into a massive mixing bowl, making sure there are no broken pieces at the bottom.
  4. Combine 1 cup white chocolate chips and 1 tbsp coconut oil in a microwave safe bowl.
  5. Microwave for 30 seconds, then stir thoroughly. Cook 30 seconds more until silky and smooth. Note: Do not overheat or it will clump.
  6. Drizzle the melted chocolate over the cereal. Fold gently with a spatula until every piece is glistening.
  7. Divide the chocolate coated cereal into two large zip top bags.
  8. Pour half of the raspberry sugar mixture into each bag and seal them with plenty of air inside.
  9. Shake the bags for about 1 minute until the cereal is evenly pink and matte.
  10. Toss in the 0.25 cup sprinkles and 0.5 cup pink M&Ms. Shake gently one last time to distribute.
