Ingredients:
- 4 large (approx. 8 oz / 225g) Anaheim peppers, halved lengthwise and seeded
- 2 tbsp (30ml) olive oil
- 2 cups (390g) cooked long-grain white rice
- 1 can (15 oz / 425g) black beans, drained and rinsed
- 1 cup (150g) frozen corn, thawed
- 1 medium (110g) yellow onion, finely diced
- 3 cloves (9g) garlic, minced
- 1 tsp (5g) ground cumin
- 1 tsp (5g) smoked paprika
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 2 tbsp (30ml) fresh lime juice
- 1 1/2 cups (170g) Monterey Jack cheese, shredded
- 1/4 cup (15g) fresh cilantro, chopped
Instructions:
- Preheat your oven to 375°F (190°C).
- Slice the Anaheim peppers in half lengthwise and scoop out the seeds and white membranes.
- Place the pepper halves in a 9x13 inch baking dish and drizzle with 2 tbsp of olive oil.
- Roast the peppers for 10 minutes to ensure they are tender.
- Heat a skillet over medium heat and sauté the diced onion until translucent (about 5 minutes).
- Stir in the minced garlic, cumin, and smoked paprika; cook for 1 minute until fragrant.
- Fold in the cooked rice, drained black beans, and thawed corn.
- Stir in the lime juice, salt, and black pepper, then remove from heat once heated through.
- Spoon the rice mixture generously into each pepper half, pressing down slightly.
- Top each pepper with a thick layer of shredded Monterey Jack cheese.
- Bake for 20–25 minutes, or until the cheese is golden-brown and bubbling.
- Garnish with chopped fresh cilantro before serving.
