Ingredients:

  • 15 oz (425g) can white beans, drained and rinsed
  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (120ml) buffalo wing sauce
  • 1/2 cup (55g) ranch dressing mix (dry powder)
  • 1/2 tsp (2g) garlic powder
  • 1/4 cup (60ml) buttermilk or whole milk
  • 1 cup (115g) shredded sharp cheddar cheese
  • 1/2 cup (50g) crumbled blue cheese

Instructions:

  1. Rinse the white beans in a colander to remove excess starch and keep the flavor clean.
  2. Place the beans in a mixing bowl and mash with a potato masher until mostly smooth but with a few chunky bits.
  3. Add the softened cream cheese, buffalo wing sauce, dry ranch mix, garlic powder, and buttermilk to the mashed beans.
  4. Beat the mixture with a hand mixer until the batter is velvety and orange.
  5. Gently fold in the shredded sharp cheddar cheese using a spatula, being careful not to overmix.
  6. Spread the mixture evenly into an 8x8 inch baking dish.
  7. Sprinkle the crumbled blue cheese over the top in an even layer.
  8. Bake at 350°F (175°C) for 25-30 minutes until the edges bubble and the top is mahogany colored. Optionally, use the broiler for the final 2 minutes for a more intense crust.
