Ingredients:

  • 1 lb fresh long-stemmed strawberries
  • 10 oz semi-sweet chocolate (60% cacao or higher), chopped
  • 1 tsp refined coconut oil
  • 1 pinch flaky sea salt
  • 2 oz white chocolate

Instructions:

  1. Lay the 1 lb of fruit on paper towels. Note: Moisture is the enemy of chocolate.
  2. Chop 10 oz of semi sweet chocolate into uniform, small pieces. Note: Smaller pieces melt faster and more evenly.
  3. Prepare a double boiler by filling a saucepan with 1 inch of water and bringing it to a simmer. Place a heat-proof glass bowl over the pan, ensuring the bottom does not touch the water.
  4. Place the bowl over the water. Add chocolate and 1 tsp coconut oil. Stir until 75% melted, then remove from heat to finish.
  5. Hold a strawberry by the stem and swirl it in the chocolate until coated to the shoulder.
  6. Lift the berry and let the excess drip off for 5 seconds.
  7. Set the berry down gently on your lined baking sheet.
  8. Sprinkle a tiny pinch of flaky salt while the chocolate is still wet.
  9. Repeat the melting process with 2 oz of white chocolate in a separate bowl.
  10. Pipe thin lines over the dark chocolate. Wait 30 minutes until matte and firm.
