Ingredients:

  • 1 ½ cups (192g) all-purpose flour, plus more for dusting
  • 1/2 cup (50g) rolled oats
  • 1/4 cup (60ml) plain, unsweetened yogurt (Greek or regular)
  • 1/2 cup (120ml) pineapple puree (fresh or canned, well-drained)
  • 1 large egg
  • 1 tablespoon (15ml) coconut oil, melted (or olive oil)
  • 1 egg white, lightly beaten (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour and rolled oats.
  3. In a separate bowl, combine the yogurt, pineapple puree, egg, and melted coconut oil.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  5. Lightly flour a clean surface. Knead the dough for a minute or two until smooth. Roll out the dough to about ¼ inch (0.6cm) thickness.
  6. Use cookie cutters to cut out shapes from the dough.
  7. Place the cut-out shapes on the prepared baking sheet.
  8. Brush the tops of the treats with lightly beaten egg white for a shiny finish (optional).
  9. Bake for 20-25 minutes, or until the treats are golden brown around the edges and firm to the touch.
  10. Let the treats cool completely on the baking sheet before serving.
