Ingredients:

  • 2 cups (240g) Whole Wheat Flour (or Gluten-Free Blend)
  • 1/2 cup (50g) Rolled Oats (not instant)
  • 1/4 cup (30g) Unsweetened Shredded Coconut
  • 1 tsp Baking Powder
  • 1 cup (240ml) Unsweetened Pineapple Puree (fresh or canned in juice, drained well)
  • 1/4 cup (60ml) Coconut Oil, melted
  • 1 Large Egg
  • 1 tbsp Honey (optional, for extra sweetness)

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, whisk together the whole wheat flour, rolled oats, shredded coconut, and baking powder.
  3. In a separate bowl, combine the pineapple puree, melted coconut oil, egg, and honey (if using).
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms. It should be slightly sticky.
  5. Lightly flour a clean surface. Roll out the dough to about 1/4 inch (6mm) thickness.
  6. Use cookie cutters or a knife to cut out desired shapes.
  7. Place the treats on the prepared baking sheet, leaving a little space between each one. Bake for 20-25 minutes, or until lightly golden brown around the edges.
  8. Let the treats cool completely on the baking sheet before serving to your furry friend.
