Ingredients:

  • lbs chicken breast, boneless, skinless, sliced thinly
  • Juice of 2 large limes (about 1/4 cup)
  • tablespoons olive oil
  • tablespoon chili powder
  • teaspoon ground cumin
  • teaspoon smoked paprika
  • teaspoon garlic powder
  • /2 teaspoon dried oregano
  • teaspoon salt
  • /2 teaspoon black pepper
  • medium bell peppers (mixed colours), sliced thinly
  • large yellow onion, halved and sliced thinly
  • tablespoon vegetable or canola oil (for sautéing)
  • medium flour tortillas
  • Chopped fresh coriander (for garnish)
  • Lime wedges (for serving)

Instructions:

  1. Marinate the Chicken: Combine lime juice, olive oil, chili powder, cumin, smoked paprika, garlic powder, oregano, salt, and pepper in a bowl. Add the chicken strips, toss well to coat thoroughly. Cover and refrigerate for at least 30 minutes.
  2. Prep Veggies: While chicken marinates, slice the bell peppers and onions uniformly.
  3. Heat the Pan: Place a large, heavy-bottomed skillet or cast-iron pan over medium-high to high heat. Add the high-heat oil. The pan must be shimmering hot before adding ingredients.
  4. Sear the Chicken: Remove chicken from the marinade (discard excess liquid). Add chicken to the hot pan in a single layer (cook in batches if necessary). Cook for 3-4 minutes per side until golden brown and cooked through (165°F/74°C). Remove chicken and set aside, keeping it warm.
  5. Sauté Vegetables: Add the sliced onions and peppers to the same pan. Sauté vigorously for 5-7 minutes until softened but still retaining a slight crunch. Season lightly with a pinch of salt.
  6. Combine & Reheat: Return the cooked chicken to the pan with the vegetables. Toss everything together for about 1 minute until heated through and coated in the residual pan juices.
  7. Warm Tortillas: Warm the tortillas either wrapped in foil in a warm oven (300°F/150°C for 10 mins) or quickly directly over a low gas flame/dry pan until soft and pliable.
  8. Serve: Serve the sizzling chicken and veggie mixture immediately alongside warm tortillas, garnished with fresh coriander and lime wedges.
