Ingredients:

  • 1 lb ground turkey (93% lean)
  • 1/2 cup panko breadcrumbs
  • 1 large egg, beaten
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup zucchini, finely grated and squeezed dry
  • 1/4 cup carrots, finely grated
  • 1/2 tsp garlic powder
  • 1/4 tsp dried oregano
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions:

  1. Grate the zucchini and carrots using the finest holes on your grater. Place the grated zucchini in a paper towel or clean kitchen cloth and squeeze firmly over the sink to remove excess water.
  2. In a large bowl, combine the beaten egg, Parmesan, garlic powder, oregano, salt, pepper, and the squeezed vegetables.
  3. Stir in the ground turkey and breadcrumbs. Use a fork or your hands to gently fold the ingredients together until just combined, stopping once egg streaks disappear.
  4. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  5. Scoop about 1 tablespoon of mixture and roll into small balls (roughly 1 inch in diameter). Place on the baking sheet.
  6. Bake for 18–22 minutes until cooked through.
