- 3 cups (450g) Roma tomatoes, diced
- 1 medium (110g) red onion, thinly sliced
- 3 tbsp (45ml) red wine vinegar
- 2 tbsp (30ml) olive oil
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) black pepper
- 1 tsp (5ml) honey
Instructions:
- Dice the tomatoes into uniform 1/2-inch pieces and slice the red onion thinly into half-moons.
- In a small jar or bowl, whisk together the red wine vinegar, olive oil, sea salt, black pepper, and honey until the mixture is opaque and thickened.
- Place the diced tomatoes and sliced onions in a large mixing bowl.
- Drizzle the dressing over the vegetables and gently fold with a spoon to combine without bruising the tomatoes.
- Let the salad sit at room temperature for 10 minutes to allow the flavors to meld before serving.
