Ingredients:

  • 3 cups (450g) Roma tomatoes, diced
  • 1 medium (110g) red onion, thinly sliced
  • 3 tbsp (45ml) red wine vinegar
  • 2 tbsp (30ml) olive oil
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) black pepper
  • 1 tsp (5ml) honey

Instructions:

  1. Dice the tomatoes into uniform 1/2-inch pieces and slice the red onion thinly into half-moons.
  2. In a small jar or bowl, whisk together the red wine vinegar, olive oil, sea salt, black pepper, and honey until the mixture is opaque and thickened.
  3. Place the diced tomatoes and sliced onions in a large mixing bowl.
  4. Drizzle the dressing over the vegetables and gently fold with a spoon to combine without bruising the tomatoes.
  5. Let the salad sit at room temperature for 10 minutes to allow the flavors to meld before serving.
