Ingredients:

  • 1 cup (150g) fresh pineapple, peeled, cored, and finely diced
  • 1 cup (170g) strawberries, hulled and quartered
  • 1 cup (160g) blueberries, washed
  • 1 cup (170g) green grapes, halved or quartered
  • 1 cup (150g) cantaloupe melon, seeded and finely diced
  • 1 cup (150g) honeydew melon, seeded and finely diced
  • 1/2 cup (75g) kiwi fruit, peeled and finely diced
  • 2 tablespoons (30ml) fresh lime juice
  • 1 tablespoon (15ml) honey
  • 1 tablespoon (15ml) fresh mint, finely chopped
  • 1/4 teaspoon (1.25ml) lime zest (optional)

Instructions:

  1. Wash all fruit thoroughly. Prepare each fruit as described in the ingredient list, dicing into roughly equal-sized pieces.
  2. Place all the diced fruit into the large mixing bowl.
  3. In the small bowl, whisk together the lime juice, honey, mint, and lime zest (if using).
  4. Pour the dressing over the fruit and gently toss to combine.
  5. For best flavor, cover the salad and chill in the refrigerator for at least 30 minutes before serving.
