Ingredients:
- 1 cup (150g) fresh pineapple, peeled, cored, and finely diced
- 1 cup (170g) strawberries, hulled and quartered
- 1 cup (160g) blueberries, washed
- 1 cup (170g) green grapes, halved or quartered
- 1 cup (150g) cantaloupe melon, seeded and finely diced
- 1 cup (150g) honeydew melon, seeded and finely diced
- 1/2 cup (75g) kiwi fruit, peeled and finely diced
- 2 tablespoons (30ml) fresh lime juice
- 1 tablespoon (15ml) honey
- 1 tablespoon (15ml) fresh mint, finely chopped
- 1/4 teaspoon (1.25ml) lime zest (optional)
Instructions:
- Wash all fruit thoroughly. Prepare each fruit as described in the ingredient list, dicing into roughly equal-sized pieces.
- Place all the diced fruit into the large mixing bowl.
- In the small bowl, whisk together the lime juice, honey, mint, and lime zest (if using).
- Pour the dressing over the fruit and gently toss to combine.
- For best flavor, cover the salad and chill in the refrigerator for at least 30 minutes before serving.
