Ingredients:
- 1 cup fresh sour orange juice (or a combination of ½ cup orange juice and ½ cup lime juice) (240ml)
- 1/2 cup olive oil (120ml)
- 10 cloves garlic, minced (about 2 tablespoons)
- 1 medium yellow onion, thinly sliced (about 1 cup)
- 1/4 cup fresh cilantro, chopped (packed)
- 1/4 cup fresh oregano, chopped (packed)
- 1 tablespoon kosher salt
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1 bay leaf (optional)
Instructions:
- Gently sauté minced garlic in a tablespoon of olive oil over low heat until fragrant, about 3-5 minutes. This softens the garlic flavor. Do not brown. Allow to cool slightly.
- In a large bowl or jar, combine sour orange juice (or orange/lime juice), olive oil, softened garlic (if using), sliced onion, cilantro, oregano, salt, cumin, pepper, and bay leaf (if using).
- Whisk or shake vigorously until all ingredients are well combined.
- Pour Mojo over your chosen protein or vegetables. Ensure everything is well coated. Cover and refrigerate for at least 30 minutes, or up to overnight for maximum flavor.
- Remove from marinade (reserving some for basting if desired) and cook your chosen food according to your preferred method.
