Ingredients:

  • 1 cup fresh sour orange juice (or a combination of ½ cup orange juice and ½ cup lime juice) (240ml)
  • 1/2 cup olive oil (120ml)
  • 10 cloves garlic, minced (about 2 tablespoons)
  • 1 medium yellow onion, thinly sliced (about 1 cup)
  • 1/4 cup fresh cilantro, chopped (packed)
  • 1/4 cup fresh oregano, chopped (packed)
  • 1 tablespoon kosher salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1 bay leaf (optional)

Instructions:

  1. Gently sauté minced garlic in a tablespoon of olive oil over low heat until fragrant, about 3-5 minutes. This softens the garlic flavor. Do not brown. Allow to cool slightly.
  2. In a large bowl or jar, combine sour orange juice (or orange/lime juice), olive oil, softened garlic (if using), sliced onion, cilantro, oregano, salt, cumin, pepper, and bay leaf (if using).
  3. Whisk or shake vigorously until all ingredients are well combined.
  4. Pour Mojo over your chosen protein or vegetables. Ensure everything is well coated. Cover and refrigerate for at least 30 minutes, or up to overnight for maximum flavor.
  5. Remove from marinade (reserving some for basting if desired) and cook your chosen food according to your preferred method.
