Ingredients:
- 24 wonton wrappers
- 2 cups vegetable oil
- 15 ounces ricotta cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon orange zest
Instructions:
- Combine ricotta, powdered sugar, vanilla extract, and orange zest in a bowl. Beat until smooth and creamy. Chill in the refrigerator for at least 15 minutes.
- Wrap each wonton wrapper around a cannoli form or metal tube. Secure the edges with a dab of water.
- Heat vegetable oil in a medium saucepan or deep fryer to 350°F (175°C). Carefully fry the wonton-wrapped shells until golden brown and crispy, about 1-2 minutes per side.
- Remove the fried shells with a slotted spoon and transfer them to a paper towel-lined plate to drain excess oil. Let cool completely before removing the cannoli forms.
- Transfer the chilled ricotta filling to a piping bag. Pipe the filling into both ends of each cooled cannoli shell.
- Serve immediately for the best texture.
