Ingredients:
- 325g all-purpose flour
- 15g cornstarch
- 1 tsp baking powder
- 0.5 tsp fine sea salt
- 225g unsalted butter, softened but cool
- 200g granulated white sugar
- 1 large egg, room temperature
- 1 tbsp pure vanilla extract
- 0.5 tsp almond extract
- 60g Christmas sprinkles (jimmies)
- 2 tbsp granulated sugar for rolling
Instructions:
- Heat your oven to 350°F and line two large sheets with parchment.
- Combine 325g flour, 15g cornstarch, 1 tsp baking powder, and 0.5 tsp salt. Mix until the flour looks aerated and uniform.
- Beat 225g butter and 200g sugar for 3 full minutes. Wait until the mixture is pale, fluffy, and doubles in volume.
- Add the egg, 1 tbsp vanilla, and 0.5 tsp almond extract.
- Gradually add the dry mix to the wet on low speed. Stop as soon as the last streak of white disappears.
- Fold in 60g of sprinkles by hand using a spatula. The dough should look speckled and festive without the colors streaking.
- Scoop 1 tablespoon portions and roll into smooth balls.
- Roll each ball in the extra 2 tbsp of granulated sugar. They should be fully coated, looking like sparkling snowballs.
- Place 12 balls per sheet, leaving 2 inches of space. Do not press them down; let the oven do the work.
- Bake for 8 minutes until the edges are just barely ivory and the tops look matte.
