Ingredients:
- 9 sheets (144g / 5.1 oz) graham crackers, crushed (about 1 1/2 cups)
- 113g (1/2 cup / 1 stick) unsalted butter, melted
- 56g (1/4 cup) granulated sugar
- 340g (12 oz) semi-sweet chocolate chips (about 2 cups)
- 113g (1/2 cup / 1 stick) unsalted butter
- 3 tablespoons heavy cream (45 ml)
- 1 teaspoon pure vanilla extract (5 ml)
- 227g (8 oz) marshmallows, cut into halves or quarters (about 4 cups)
Instructions:
- Line the 9x9 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- Combine crushed graham crackers, melted butter, and sugar in a medium bowl. Press firmly into the prepared pan and set aside.
- In a large microwave-safe bowl, combine chocolate chips and butter. Microwave in 30-second intervals, stirring in between, until melted and smooth. Alternatively, melt chocolate and butter in a double boiler.
- Stir in heavy cream and vanilla extract until well combined.
- Gently fold in marshmallows until evenly distributed.
- Pour the chocolate marshmallow mixture over the graham cracker base and spread evenly.
- Cover the pan with plastic wrap and refrigerate for at least 2 hours, or until firm.
