Ingredients:
- 2 English cucumbers (approximately 12 inches/30 cm each), washed and dried
- 8 ounces (225g) cream cheese, softened
- 2 tablespoons (30ml) fresh lemon juice
- 1 tablespoon (15ml) finely chopped fresh dill (plus extra for garnish, optional)
- 1 tablespoon (15ml) finely chopped fresh chives (plus extra for garnish, optional)
- 1/4 teaspoon freshly ground black pepper
- 4 ounces (115g) smoked salmon, thinly sliced
Instructions:
- Slice the cucumbers into ½-inch (1.25cm) thick rounds. Pat the slices dry with paper towels to remove excess moisture.
- In a mixing bowl, combine the softened cream cheese, lemon juice, dill, chives, and black pepper. Mix until smooth and well combined.
- Pipe (or spoon) a small amount of the cream cheese mixture onto each cucumber slice.
- Top each bite with a small piece of smoked salmon, gently arranging it on top of the cream cheese.
- Sprinkle with extra dill and/or chives, if desired.
- Serve immediately. Best enjoyed fresh.
