Ingredients:

  • 2 lbs boneless skinless chicken thighs, trimmed
  • 0.5 cup chicken bone broth
  • 8 oz Neufchâtel cheese, cubed
  • 2 tbsp dried chives
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions:

  1. Place the trimmed chicken thighs in the bottom of a 6-quart slow cooker in a single layer.
  2. Sprinkle dried chives, garlic powder, and onion powder evenly over the chicken.
  3. Pour the chicken bone broth around the edges of the chicken and top with cubed Neufchâtel cheese.
  4. Cover and cook on Low for 6 hours until chicken is tender.
  5. Using two forks, shred the chicken directly in the slow cooker, stirring to incorporate the melted Neufchâtel cheese into a smooth sauce.
