Ingredients:
- 2 lbs boneless skinless chicken thighs, trimmed
- 0.5 cup chicken bone broth
- 8 oz Neufchâtel cheese, cubed
- 2 tbsp dried chives
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions:
- Place the trimmed chicken thighs in the bottom of a 6-quart slow cooker in a single layer.
- Sprinkle dried chives, garlic powder, and onion powder evenly over the chicken.
- Pour the chicken bone broth around the edges of the chicken and top with cubed Neufchâtel cheese.
- Cover and cook on Low for 6 hours until chicken is tender.
- Using two forks, shred the chicken directly in the slow cooker, stirring to incorporate the melted Neufchâtel cheese into a smooth sauce.
