Ingredients:

  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 12 oz thick-cut corn tortilla chips
  • 3 cups shredded sharp cheddar or Mexican blend cheese
  • 1/2 cup diced red onion
  • 1/4 cup sliced pickled jalapeños
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream
  • 1/2 cup chunky salsa

Instructions:

  1. Brown the ground beef in a skillet over medium-high heat until no pink remains. Drain the excess fat.
  2. Stir in the taco seasoning and water, simmering for 3–5 minutes until the sauce reduces to a thick glaze that clings to the meat.
  3. Line a rimmed sheet pan with parchment paper. Spread the shredded cheese directly onto the parchment first, then top with the seasoned beef.
  4. Bake at 400°F (200°C) for 5–8 minutes until the cheese is bubbling and mahogany-colored.
  5. Spread tortilla chips on a separate platter or a second sheet pan. Carefully slide the hot beef-and-cheese layer off the parchment and onto the chips.
  6. Dollop sour cream and salsa over the top. Sprinkle with diced red onion, pickled jalapeños, and cilantro.
