Ingredients:
- 1 cup unsalted butter, softened (227g)
- 3/4 cup brown sugar, packed (150g)
- 3/4 cup granulated sugar (150g)
- 2 large eggs (100g)
- 2 tsp vanilla extract (10ml)
- 2 1/4 cups all-purpose flour (280g)
- 1 tsp baking soda (5g)
- 1/2 tsp salt (3g)
- 2 cups Rice Krispies cereal (60g)
- 2 cups semi-sweet chocolate chips (340g)
Instructions:
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and white sugar until the mixture is pale and fluffy (about 2–3 minutes).
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Whisk together the flour, baking soda, and salt in a separate small bowl, then gradually add to the wet ingredients. Mix on low speed just until the white streaks of flour disappear.
- Using a spatula, gently fold in the semi-sweet chocolate chips and Rice Krispies cereal until evenly distributed.
- Scoop rounded tablespoons of dough onto the prepared sheets, spacing them 2 inches apart.
- Bake for 8–10 minutes until the edges are a deep golden mahogany, but the centers still look slightly soft. Allow them to firm up on the pan.
