Ingredients:
- 1 package (14.1 ounces/400g) frozen puff pastry, thawed
- 8 ounces (225g) cream cheese, softened
- 1/2 cup (100g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup (75g) fresh raspberries
- 1 tablespoon all-purpose flour
- 1 large egg, beaten
- 1/4 cup (30g) powdered sugar
- 1-2 teaspoons milk or lemon juice
Instructions:
- Lightly flour a clean surface and gently roll out the puff pastry sheet. Cut out circles using a 2 1/2-inch round cookie cutter. Place circles on a parchment-lined baking sheet.
- Cover the baking sheet with plastic wrap and chill the pastry circles in the refrigerator for 30 minutes.
- In a mixing bowl, beat the softened cream cheese and sugar until smooth. Beat in the egg, vanilla extract, and salt until well combined. Gently fold in the fresh raspberries.
- Remove the pastry circles from the refrigerator. Place a small dollop of cream cheese filling in the center of each circle, leaving a small border.
- Brush the edges of each pastry circle with the beaten egg wash.
- Preheat oven to 375°F (190°C). Bake for 20-25 minutes, or until golden brown and the filling is set.
- Let the bites cool completely on the baking sheet. Whisk together the powdered sugar and milk (or lemon juice) until smooth. Drizzle the glaze over the cooled bites. Garnish with fresh raspberries, if desired.
