Ingredients:

  • 250g all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp fine sea salt
  • 1 tbsp pumpkin pie spice
  • 425g pumpkin puree
  • 2 large eggs
  • 150g dark brown sugar
  • 50g granulated sugar
  • 60g unsweetened applesauce
  • 60ml avocado oil
  • 1 tsp vanilla extract

Instructions:

  1. Heat your oven to 375°F (190°C). Line a 12-cup standard muffin tin with paper liners or grease thoroughly.
  2. In a large mixing bowl, whisk together the flour, pumpkin pie spice, baking soda, baking powder, and salt until aerated and free of clumps.
  3. In a separate bowl, emulsify the wet ingredients by whisking the pumpkin puree, eggs, dark brown sugar, granulated sugar, avocado oil, applesauce, and vanilla extract until smooth.
  4. Fold the wet emulsion into the dry ingredients using a silicone spatula until just combined; do not overmix.
  5. Divide the batter evenly among the 12 muffin cups.
  6. Bake at 375°F for 20 minutes or until a toothpick comes out clean.
  7. Transfer to a wire cooling rack and allow to cool before serving.
