Ingredients:
- 250g all-purpose flour
- 1 tsp baking soda
- 0.5 tsp baking powder
- 0.5 tsp fine sea salt
- 1 tbsp pumpkin pie spice
- 425g pumpkin puree
- 2 large eggs
- 150g dark brown sugar
- 50g granulated sugar
- 60g unsweetened applesauce
- 60ml avocado oil
- 1 tsp vanilla extract
Instructions:
- Heat your oven to 375°F (190°C). Line a 12-cup standard muffin tin with paper liners or grease thoroughly.
- In a large mixing bowl, whisk together the flour, pumpkin pie spice, baking soda, baking powder, and salt until aerated and free of clumps.
- In a separate bowl, emulsify the wet ingredients by whisking the pumpkin puree, eggs, dark brown sugar, granulated sugar, avocado oil, applesauce, and vanilla extract until smooth.
- Fold the wet emulsion into the dry ingredients using a silicone spatula until just combined; do not overmix.
- Divide the batter evenly among the 12 muffin cups.
- Bake at 375°F for 20 minutes or until a toothpick comes out clean.
- Transfer to a wire cooling rack and allow to cool before serving.
