Ingredients:

  • 1 Tbsp Olive Oil or Vegetable Oil
  • 1 medium Yellow Onion, finely diced
  • 5 lbs Lean Ground Beef (85-90% fat)
  • 2 cloves Garlic, minced
  • 1 tsp Salt (Kosher or Sea)
  • 1/2 tsp Black Pepper, freshly ground
  • 1 Tbsp Worcestershire Sauce
  • 4 Tbsp Unsalted Butter
  • 4 Tbsp All-Purpose Flour
  • 1 cup Chicken or Beef Stock, low sodium (warmed)
  • 1 cup Whole Milk, slightly warmed
  • 1/2 tsp Dried Thyme
  • 1 tsp Dijon Mustard (optional)
  • 10 oz bag Frozen Mixed Vegetables (Peas, Carrots, Corn)
  • 32 oz bag Tater Tots (frozen)
  • 1 cup Sharp Cheddar Cheese, grated (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Lightly grease the 9x13 inch baking dish. Ensure all sauce ingredients are measured and ready.
  2. Brown the Meat: Heat oil in the large skillet over medium-high heat. Add ground beef, breaking it up with a spoon. Cook until thoroughly browned. Drain off any excess fat (a critical step for flavor control).
  3. Sauté Aromatics: Reduce heat to medium. Add the diced onion to the meat mixture and cook until softened, about 5 minutes. Stir in the minced garlic, salt, pepper, and Worcestershire sauce. Cook for 1 minute until fragrant.
  4. Set Aside: Remove the beef mixture from the pan and set it aside in a bowl. Do not wipe the pan clean.
  5. Crafting the Elevated Sauce: Return the empty skillet (with residual drippings) to medium heat. Melt the butter. Once melted, whisk in the flour continuously for 1–2 minutes until a smooth, pale paste (roux) forms and smells slightly nutty.
  6. Whisk in Liquid: Slowly pour in the warm stock, whisking vigorously to ensure the sauce remains lump-free. Once fully incorporated, slowly add the milk, continuing to whisk.
  7. Simmer & Thicken: Bring the mixture to a gentle simmer, stirring occasionally. The sauce should thicken significantly (5–7 minutes). Stir in the dried thyme and Dijon mustard (if using). Taste and adjust seasoning.
  8. Combine the Filling: Return the browned beef and onion mixture to the skillet with the sauce. Add the frozen mixed vegetables and stir well to combine everything evenly.
  9. Transfer to Casserole: Pour the entire filling mixture into the prepared 9x13 baking dish.
  10. Layer the Tots: Arrange the frozen tater tots in a tight, single, even layer over the top of the filling. Do not pack them down; keep them upright for maximum crispness.
  11. Bake (Initial): Bake for 20 minutes at 400°F (200°C). The filling should be bubbly and the tots should be starting to crisp.
  12. Add Cheese (Optional Finish): If using, sprinkle the grated cheddar evenly over the tater tots. Return the dish to the oven for an additional 5 minutes, or until the cheese is melted and bubbly and the tots are deeply golden brown and crispy.
  13. Rest: Allow the hotdish to rest for 5–10 minutes after removing it from the oven before serving. This allows the sauce to set properly.
