Ingredients:

  • 1 cup (200g) Unsweetened Cocoa Powder (Dutch-processed preferred)
  • 1 ½ cups (300g) Granulated Sugar
  • ½ cup (120g) Dark Chocolate, finely grated (at least 70% cocoa solids)
  • ¼ cup (30g) Cornstarch (Cornflour in the UK!)
  • 1 teaspoon (5ml) Salt
  • ½ teaspoon (2.5ml) Ground Cinnamon
  • ¼ teaspoon (1.25ml) Ground Nutmeg (optional)
  • 2-3 tablespoons Hot Chocolate Powder
  • 1 cup (240ml) Milk (dairy or non-dairy)

Instructions:

  1. In a large mixing bowl, whisk together cocoa powder, granulated sugar, cornstarch (cornflour), salt, cinnamon, and nutmeg (if using). Ensure there are no lumps.
  2. Add the finely grated dark chocolate to the dry ingredients.
  3. Whisk everything together really well until the chocolate is evenly distributed throughout the mixture. The mixture should be uniform in colour.
  4. Transfer the homemade hot chocolate powder to an airtight container.
  5. For each serving, heat milk in a saucepan (or microwave) until hot, but not boiling.
  6. In a mug, combine 2-3 tablespoons of hot chocolate powder with a splash of hot milk to form a paste. Then, gradually whisk in the remaining hot milk until smooth. Serve immediately.
