Ingredients:
- 1 cup (200g) Unsweetened Cocoa Powder (Dutch-processed preferred)
- 1 ½ cups (300g) Granulated Sugar
- ½ cup (120g) Dark Chocolate, finely grated (at least 70% cocoa solids)
- ¼ cup (30g) Cornstarch (Cornflour in the UK!)
- 1 teaspoon (5ml) Salt
- ½ teaspoon (2.5ml) Ground Cinnamon
- ¼ teaspoon (1.25ml) Ground Nutmeg (optional)
- 2-3 tablespoons Hot Chocolate Powder
- 1 cup (240ml) Milk (dairy or non-dairy)
Instructions:
- In a large mixing bowl, whisk together cocoa powder, granulated sugar, cornstarch (cornflour), salt, cinnamon, and nutmeg (if using). Ensure there are no lumps.
- Add the finely grated dark chocolate to the dry ingredients.
- Whisk everything together really well until the chocolate is evenly distributed throughout the mixture. The mixture should be uniform in colour.
- Transfer the homemade hot chocolate powder to an airtight container.
- For each serving, heat milk in a saucepan (or microwave) until hot, but not boiling.
- In a mug, combine 2-3 tablespoons of hot chocolate powder with a splash of hot milk to form a paste. Then, gradually whisk in the remaining hot milk until smooth. Serve immediately.
