Ingredients:

  • 1.5 cups warm water (110°F)
  • 1 tbsp brown sugar
  • 2.25 tsp active dry yeast
  • 2 tbsp unsalted butter, melted and cooled
  • 4.25 cups bread flour
  • 2 tsp fine sea salt
  • 8 cups water
  • 0.5 cup baking soda
  • 1 large egg
  • 1 tbsp water
  • 1.5 tbsp coarse pretzel salt

Instructions:

  1. In a large mixing bowl or stand mixer, whisk together 1.5 cups warm water and brown sugar until dissolved. Sprinkle yeast over the surface and let sit for 5–8 minutes until foamy.
  2. Stir in the melted butter and sea salt. Gradually add the bread flour, one cup at a time, mixing until a cohesive dough forms and pulls away from the sides of the bowl.
  3. Knead the dough for 5 minutes until smooth and elastic. Place in a greased bowl, cover with a kitchen towel, and let rise in a warm spot for 60 minutes or until doubled in size.
  4. Preheat your oven to 425°F (218°C) and prepare two baking sheets with parchment paper. Bring 8 cups of water and the baking soda to a rolling boil in a large, wide-rimmed pot.
  5. Divide the dough into two equal portions. Roll each out into a 12-inch circle. Carefully slide one dough round into the boiling baking soda bath for 30 seconds, then remove using a large slotted spatula.
  6. Place the boiled crust onto the prepared baking sheet. Whisk the egg with 1 tablespoon of water and brush the edges of the crust. Sprinkle with coarse pretzel salt.
  7. Add your desired pizza toppings and bake for 12 minutes, or until the crust is a deep mahogany brown and the cheese is bubbly.
