Ingredients:
- 1.5 cups warm water (110°F)
- 1 tbsp brown sugar
- 2.25 tsp active dry yeast
- 2 tbsp unsalted butter, melted and cooled
- 4.25 cups bread flour
- 2 tsp fine sea salt
- 8 cups water
- 0.5 cup baking soda
- 1 large egg
- 1 tbsp water
- 1.5 tbsp coarse pretzel salt
Instructions:
- In a large mixing bowl or stand mixer, whisk together 1.5 cups warm water and brown sugar until dissolved. Sprinkle yeast over the surface and let sit for 5–8 minutes until foamy.
- Stir in the melted butter and sea salt. Gradually add the bread flour, one cup at a time, mixing until a cohesive dough forms and pulls away from the sides of the bowl.
- Knead the dough for 5 minutes until smooth and elastic. Place in a greased bowl, cover with a kitchen towel, and let rise in a warm spot for 60 minutes or until doubled in size.
- Preheat your oven to 425°F (218°C) and prepare two baking sheets with parchment paper. Bring 8 cups of water and the baking soda to a rolling boil in a large, wide-rimmed pot.
- Divide the dough into two equal portions. Roll each out into a 12-inch circle. Carefully slide one dough round into the boiling baking soda bath for 30 seconds, then remove using a large slotted spatula.
- Place the boiled crust onto the prepared baking sheet. Whisk the egg with 1 tablespoon of water and brush the edges of the crust. Sprinkle with coarse pretzel salt.
- Add your desired pizza toppings and bake for 12 minutes, or until the crust is a deep mahogany brown and the cheese is bubbly.
