  • 1 medium onion, chopped (approximately 1 cup or 150g)
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes (794g)
  • 1 (15 ounce) can tomato sauce (425g)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • 1 (16 ounce) can refrigerated biscuit dough or 1 sheet (14.1 oz) frozen puff pastry, thawed (454g biscuit / 400g puff pastry)
  • 1 pound Italian sausage, cooked and crumbled (454g)
  • 1 cup sliced pepperoni (approx. 100g)
  • 2 cups shredded mozzarella cheese (approx. 200g)
  • 1/2 cup grated Parmesan cheese (approx. 50g)
  • Optional toppings: sliced mushrooms, bell peppers, black olives

Instructions:

  1. Sauté onion and garlic in olive oil. Add crushed tomatoes, tomato sauce, oregano, basil, red pepper flakes (if using), sugar, salt, and pepper. Simmer for 15 minutes, stirring occasionally.
  2. Preheat oven to 375°F (190°C).
  3. If using biscuits: Flatten each biscuit slightly and arrange them to cover the bottom of the baking dish, overlapping slightly to form a crust. If using puff pastry: Gently roll out the pastry to fit the baking dish and place it in the dish.
  4. Spread a thin layer of sauce over the biscuit/pastry base. Layer with half of the sausage, pepperoni, mozzarella cheese, and Parmesan cheese. Repeat layers.
  5. Bake for 35-40 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  6. Let stand for 5-10 minutes before cutting and serving pizza casserole.
