Ingredients:

  • 1 ½ cups (180g) all-purpose flour (or gluten-free blend)
  • ½ cup (45g) rolled oats (not instant)
  • ½ teaspoon baking powder
  • ¼ teaspoon ground cinnamon (optional)
  • ½ cup (120ml) unsweetened applesauce
  • ½ cup (120ml) crushed pineapple, drained very well
  • 1 large egg
  • 1 tablespoon coconut oil, melted (or olive oil)

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, oats, baking powder, and cinnamon (if using).
  3. In a separate bowl, whisk together the applesauce, drained pineapple, egg, and melted coconut oil.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms. It should be slightly sticky.
  5. On a lightly floured surface, roll out the dough to about ¼ inch thickness. Use cookie cutters to cut out shapes, or simply form into small balls or biscuits.
  6. Place biscuits on the prepared baking sheet and bake for 20-25 minutes, or until golden brown around the edges.
  7. Let cool completely on the baking sheet before serving.
