Ingredients:
- 1 ½ cups (180g) all-purpose flour (or gluten-free blend)
- ½ cup (45g) rolled oats (not instant)
- ½ teaspoon baking powder
- ¼ teaspoon ground cinnamon (optional)
- ½ cup (120ml) unsweetened applesauce
- ½ cup (120ml) crushed pineapple, drained very well
- 1 large egg
- 1 tablespoon coconut oil, melted (or olive oil)
Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, oats, baking powder, and cinnamon (if using).
- In a separate bowl, whisk together the applesauce, drained pineapple, egg, and melted coconut oil.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms. It should be slightly sticky.
- On a lightly floured surface, roll out the dough to about ¼ inch thickness. Use cookie cutters to cut out shapes, or simply form into small balls or biscuits.
- Place biscuits on the prepared baking sheet and bake for 20-25 minutes, or until golden brown around the edges.
- Let cool completely on the baking sheet before serving.
