Ingredients:
- 4 Ahi Tuna (Sushi-Grade) Steaks (approx. 6 oz each)
- 1 Tbsp Coarse Sea Salt
- 1 Tbsp Freshly Cracked Black Pepper
- 1 Tbsp Toasted Sesame Oil
- 1/4 cup White Sesame Seeds
- 1/4 cup Black Sesame Seeds
- 2 Tbsp High-Heat Neutral Oil (e.g., Avocado or Grapeseed)
- 1/4 cup Low-Sodium Soy Sauce (or Tamari)
- 2 Tbps Rice Vinegar (unseasoned)
- 1 Tbsp Fresh Ginger, finely grated
- 1 clove Garlic, minced
- 1 tsp Honey or Maple Syrup
- 1/2 tsp Squeeze of lime or lemon juice
- 2 strands Spring Onion (Scallions), finely sliced (Optional Garnish)
- 1 Tbsp Fresh Coriander (Cilantro), chopped (Optional Garnish)
Instructions:
- Prepare the Tuna Steaks: Carefully blot all four tuna steaks very dry using kitchen paper. Evenly sprinkle the tuna steaks with salt and pepper.
- Coating and Dredging: Brush the steaks lightly all over with sesame oil. Combine the black and white sesame seeds in a shallow dish. Press each steak firmly into the sesame mixture on all sides, ensuring a thick, even crust. Place on a clean plate and chill for 10 minutes.
- Prepare the Ginger-Soy Dressing: Whisk together the soy sauce/Tamari, rice vinegar, grated ginger, minced garlic, honey/maple syrup, and lime/lemon juice in a small bowl. Taste test and set aside.
- The Searing Process: Place a heavy-bottomed skillet (cast iron is ideal) over high heat. Add the high-heat neutral oil and let the pan get smoking hot (about 2–3 minutes).
- Sear: Carefully place the tuna steaks into the hot pan. Sear for exactly 60–90 seconds per side for a classic rare centre. Use tongs to sear all four thin edges of the steaks for about 30 seconds each, just to set the crust.
- Rest and Slice: Immediately remove the tuna from the pan and place it on a clean chopping board. Allow the tuna to rest for only 2–3 minutes. Using a sharp knife, slice the steaks against the grain into 1/4 inch thick slices.
- Serve: Arrange the sliced tuna attractively on plates. Drizzle the Ginger-Soy Dressing generously over the slices and sprinkle with sliced spring onion and chopped coriander (if using).
