Ingredients:

  • 1/2 cup (113g) unsalted butter
  • 1 pint (473ml) heavy cream
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups (150g) grated Parmesan cheese, finely grated
  • 1/4 cup (35g) grated Romano cheese, finely grated (optional)
  • 1 clove garlic, minced (about 1 teaspoon)

Instructions:

  1. Melt butter in a medium saucepan over medium-low heat.
  2. Stir in the heavy cream, pepper, nutmeg, and salt. Bring to a simmer, stirring frequently to prevent scorching.
  3. Reduce heat to low and simmer gently for 5-7 minutes, or until the sauce starts to thicken slightly, stirring occasionally.
  4. Remove from heat. Gradually whisk in the Parmesan cheese and romano cheese (if using) until completely melted and the sauce is smooth and creamy. Make sure to whisk constantly to avoid clumping.
  5. Stir in the minced garlic until well combined.
  6. Serve immediately over your favorite pasta.
