Ingredients:

  • ½ cup (50g) unsweetened cocoa powder
  • ½ cup (100g) packed brown sugar
  • ¼ teaspoon fine sea salt (1.5ml)
  • ½ cup (120ml) milk
  • ¼ cup (60g) unsalted butter, melted
  • 1 teaspoon (5ml) vanilla extract
  • ½ cup (85g) chopped walnuts or pecans (optional)
  • ½ cup (85g) chocolate chips (optional)
  • ¼ cup (40g) sprinkles (optional)

Instructions:

  1. Grind rolled oats in a food processor until finely ground (or use oat flour).
  2. In a large bowl, whisk together ground oats, cocoa powder, brown sugar, and salt.
  3. Stir in milk, melted butter (or coconut oil), and vanilla extract. Mix until well combined and a thick dough forms.
  4. Gently fold in any desired mix-ins like nuts or chocolate chips (optional).
  5. Use a small ice cream scoop or spoon to portion the dough into bite-sized balls. Roll each ball between your palms to smooth the surface.
  6. Place the brownie bites on the prepared baking sheet and chill in the refrigerator for at least 30 minutes, or until firm.
  7. Once chilled, serve and enjoy! These are best stored in the refrigerator.
