- 1/2 cup honey or maple syrup (120ml)
- 2 cups rolled oats (180g)
- 1/4 cup vanilla or chocolate protein powder (25g) (optional)
- 1/2 cup mini chocolate chips (90g)
- 1/2 cup mini M&M's (90g)
- 1 teaspoon vanilla extract
- 1/4 teaspoon fine sea salt
Instructions:
- In a large mixing bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Stir vigorously until the mixture is smooth, homogenous, and has a glossy sheen.
- Add the rolled oats, protein powder (if using), mini chocolate chips, mini M&M's, and sea salt to the wet mixture. Fold everything together with a sturdy spatula or wooden spoon. Continue mixing until all the dry ingredients are fully incorporated and the mixture forms a thick, cohesive dough that is sticky but firm enough to hold its shape.
- Using a cookie scoop or your hands, roll the mixture into approximately 24 uniform energy balls. Place them on a baking sheet lined with parchment paper or a silicone baking mat.
- Refrigerate the energy balls for at least 15 minutes to allow them to firm up before serving. Store in an airtight container in the refrigerator for up to 1 week.
