Ingredients:

  • 1/2 cup honey or maple syrup (120ml)
  • 2 cups rolled oats (180g)
  • 1/4 cup vanilla or chocolate protein powder (25g) (optional)
  • 1/2 cup mini chocolate chips (90g)
  • 1/2 cup mini M&M's (90g)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt

Instructions:

  1. In a large mixing bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Stir vigorously until the mixture is smooth, homogenous, and has a glossy sheen.
  2. Add the rolled oats, protein powder (if using), mini chocolate chips, mini M&M's, and sea salt to the wet mixture. Fold everything together with a sturdy spatula or wooden spoon. Continue mixing until all the dry ingredients are fully incorporated and the mixture forms a thick, cohesive dough that is sticky but firm enough to hold its shape.
  3. Using a cookie scoop or your hands, roll the mixture into approximately 24 uniform energy balls. Place them on a baking sheet lined with parchment paper or a silicone baking mat.
  4. Refrigerate the energy balls for at least 15 minutes to allow them to firm up before serving. Store in an airtight container in the refrigerator for up to 1 week.
