Ingredients:
- 1/2 lb lean ground beef
- 4 oz Italian sausage, removed from casing
- 4 oz pepperoni, diced small
- 4 slices cooked bacon, crumbled
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 8 small corn or flour tortillas (approx. 6 inches)
- 1/2 cup thick pizza sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions:
- Brown the ground beef and Italian sausage in a large non-stick skillet over medium-high heat until mahogany-colored and fragrant.
- Stir in the diced pepperoni and crumbled bacon, cooking for another 2-3 minutes until the pepperoni edges are crisp.
- Stir in the Italian seasoning and garlic powder, then remove the meat medley from heat.
- Preheat the oven to 400°F (200°C). Fold the tortillas in half and prop them up against each other on a baking sheet or taco rack.
- Bake the shells for 3-5 minutes until they feel firm to the touch.
- Spoon 1 tablespoon of pizza sauce into the bottom of each pre-baked shell.
- Pack a generous portion of the meat mixture into the shells and top with shredded mozzarella and grated Parmesan.
- Return to the oven for 5-7 minutes until the cheese is bubbling and golden brown.
