Ingredients:

  • 2 low carb tortillas (approx. 70g each)
  • 8 oz deli turkey breast, thinly sliced
  • 1/2 large avocado, sliced or mashed
  • 1 cup fresh baby spinach
  • 1/2 cup cherry tomatoes, quartered
  • 2 tbsp red onion, thinly sliced
  • 2 tbsp avocado-oil mayonnaise
  • 1 tsp Dijon mustard
  • 1/2 tsp lemon juice
  • 1 pinch cracked black pepper
  • 1 pinch sea salt

Instructions:

  1. Whisk the avocado-oil mayonnaise, Dijon mustard, lemon juice, salt, and pepper in a small bowl until velvety.
  2. Pat the quartered tomatoes dry with a paper towel to remove excess surface moisture to prevent the wrap from becoming soggy.
  3. Spread the zesty sauce evenly across the center of the tortilla.
  4. Layer the spinach first to act as a moisture barrier, followed by the sliced turkey breast.
  5. Place the avocado slices and red onion on top of the meat, and finish with the dried tomatoes.
  6. Fold the sides of the wrap inward, then roll tightly from the bottom up, applying light pressure to compress the ingredients.
