- 2 low carb tortillas (approx. 70g each)
- 8 oz deli turkey breast, thinly sliced
- 1/2 large avocado, sliced or mashed
- 1 cup fresh baby spinach
- 1/2 cup cherry tomatoes, quartered
- 2 tbsp red onion, thinly sliced
- 2 tbsp avocado-oil mayonnaise
- 1 tsp Dijon mustard
- 1/2 tsp lemon juice
- 1 pinch cracked black pepper
- 1 pinch sea salt
Instructions:
- Whisk the avocado-oil mayonnaise, Dijon mustard, lemon juice, salt, and pepper in a small bowl until velvety.
- Pat the quartered tomatoes dry with a paper towel to remove excess surface moisture to prevent the wrap from becoming soggy.
- Spread the zesty sauce evenly across the center of the tortilla.
- Layer the spinach first to act as a moisture barrier, followed by the sliced turkey breast.
- Place the avocado slices and red onion on top of the meat, and finish with the dried tomatoes.
- Fold the sides of the wrap inward, then roll tightly from the bottom up, applying light pressure to compress the ingredients.
