Ingredients:

  • 4 (6-ounce) halibut fillets
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup finely grated Parmesan cheese
  • 1/4 cup almond flour
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon dried Italian herbs
  • 1 tablespoon chopped fresh parsley (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together olive oil, lemon juice, garlic powder, and onion powder. Season with salt and pepper.
  3. Place halibut fillets on the baking sheet. Brush with the olive oil mixture.
  4. In a separate bowl, combine Parmesan cheese, almond flour, mayonnaise, Dijon mustard, and Italian herbs. Mix well.
  5. Spread the Parmesan mixture evenly over each halibut fillet.
  6. Bake for 15-20 minutes, or until the halibut is cooked through.
  7. Garnish with fresh parsley and serve.
