Ingredients:
- 4 (6-ounce) halibut fillets
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1 cup finely grated Parmesan cheese
- 1/4 cup almond flour
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 teaspoon dried Italian herbs
- 1 tablespoon chopped fresh parsley (optional)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together olive oil, lemon juice, garlic powder, and onion powder. Season with salt and pepper.
- Place halibut fillets on the baking sheet. Brush with the olive oil mixture.
- In a separate bowl, combine Parmesan cheese, almond flour, mayonnaise, Dijon mustard, and Italian herbs. Mix well.
- Spread the Parmesan mixture evenly over each halibut fillet.
- Bake for 15-20 minutes, or until the halibut is cooked through.
- Garnish with fresh parsley and serve.
