Ingredients:

  • 300g English cucumber, finely diced
  • 150g Firm Roma tomatoes, seeded and diced
  • 75g Red onion, finely diced
  • 5g Green chili, minced
  • 15g Fresh cilantro, chopped
  • 30ml Freshly squeezed lemon juice
  • 3g Roasted cumin powder
  • 1g Black pepper, freshly ground
  • 3g Sea salt

Instructions:

  1. Dice the cucumbers and tomatoes into uniform, small cubes (about 1/4 inch). If using regular cucumbers instead of English, peel the skin and scoop out the seeds first to reduce excess water.
  2. Place the diced red onions in a small bowl of cold water for 10 minutes to remove harsh sulfur compounds. Drain and pat dry before adding to the bowl.
  3. Combine the cucumber, tomato, soaked onion, and green chili in a large bowl. Toss in the chopped cilantro.
  4. Immediately before serving, drizzle the lemon juice and sprinkle the cumin, black pepper, and salt over the top. Toss gently to coat.
