Ingredients:
- 300g English cucumber, finely diced
- 150g Firm Roma tomatoes, seeded and diced
- 75g Red onion, finely diced
- 5g Green chili, minced
- 15g Fresh cilantro, chopped
- 30ml Freshly squeezed lemon juice
- 3g Roasted cumin powder
- 1g Black pepper, freshly ground
- 3g Sea salt
Instructions:
- Dice the cucumbers and tomatoes into uniform, small cubes (about 1/4 inch). If using regular cucumbers instead of English, peel the skin and scoop out the seeds first to reduce excess water.
- Place the diced red onions in a small bowl of cold water for 10 minutes to remove harsh sulfur compounds. Drain and pat dry before adding to the bowl.
- Combine the cucumber, tomato, soaked onion, and green chili in a large bowl. Toss in the chopped cilantro.
- Immediately before serving, drizzle the lemon juice and sprinkle the cumin, black pepper, and salt over the top. Toss gently to coat.
