Ingredients:

  • 1/2 cup extra virgin olive oil
  • 3 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey

Instructions:

  1. Place the honey and Dijon mustard into a mason jar. Stir briefly to combine the ingredients into a paste.
  2. Pour in the apple cider vinegar and olive oil.
  3. Screw the lid on tightly and shake vigorously for 30–60 seconds until the mixture transforms into a thick, opaque, and uniform liquid.
  4. Taste the dressing with a leaf of salad green; add a pinch more honey if too sharp or a teaspoon of additional vinegar if too heavy.
