Ingredients:

  • 4 cups (600g) frozen pineapple chunks
  • 1 cup (240ml) pineapple juice, chilled
  • ½ cup (120ml) full-fat coconut milk (canned, refrigerated)
  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon (15ml) fresh lime juice (optional)

Instructions:

  1. Ensure pineapple chunks are frozen solid.
  2. Place frozen pineapple, pineapple juice, coconut milk, sugar, and lime juice (if using) into the blender.
  3. Blend on high speed until the mixture is completely smooth and creamy. You may need to stop and scrape down the sides of the blender occasionally.
  4. For a firmer consistency, transfer the mixture to a freezer-safe container and freeze for at least 2 hours.
  5. Serve immediately for a soft-serve texture. If frozen for longer than 2 hours, let thaw slightly for about 15 minutes or re-blend briefly before serving. Now you have your homemade pineapple dole whip.
  6. Spoon or pipe into serving dishes. Garnish with fresh pineapple wedges, maraschino cherries, or a sprinkle of toasted coconut, if desired.
