Ingredients:
- 4 cups (600g) frozen pineapple chunks
- 1 cup (240ml) pineapple juice, chilled
- ½ cup (120ml) full-fat coconut milk (canned, refrigerated)
- 2 tablespoons (25g) granulated sugar
- 1 tablespoon (15ml) fresh lime juice (optional)
Instructions:
- Ensure pineapple chunks are frozen solid.
- Place frozen pineapple, pineapple juice, coconut milk, sugar, and lime juice (if using) into the blender.
- Blend on high speed until the mixture is completely smooth and creamy. You may need to stop and scrape down the sides of the blender occasionally.
- For a firmer consistency, transfer the mixture to a freezer-safe container and freeze for at least 2 hours.
- Serve immediately for a soft-serve texture. If frozen for longer than 2 hours, let thaw slightly for about 15 minutes or re-blend briefly before serving. Now you have your homemade pineapple dole whip.
- Spoon or pipe into serving dishes. Garnish with fresh pineapple wedges, maraschino cherries, or a sprinkle of toasted coconut, if desired.
