Ingredients:

  • 2 cups (250g) all-purpose flour
  • 3/4 cup (180ml) warm water
  • 2 tsp (7g) active dry yeast
  • 1 tsp (5g) honey
  • 1 tsp (6g) fine sea salt
  • 2 tbsp (30ml) extra virgin olive oil
  • 1 tbsp (15ml) melted butter
  • 1 pinch (1g) flaky sea salt

Instructions:

  1. In a mixing bowl, combine warm water and honey. Stir in the yeast and let sit for 5-10 minutes until frothy.
  2. Stir in the olive oil and salt. Gradually add the flour, mixing with a wooden spoon or spatula until a shaggy, cohesive ball forms and pulls away from the sides of the bowl.
  3. Turn the dough onto a floured surface. Knead by hand for 3-5 minutes until the surface is smooth and the dough feels supple.
  4. Place the dough back in the bowl, cover with a damp cloth, and let it rest for 30 minutes.
  5. Divide the dough into two equal portions. Using a rolling pin, roll each piece into an oval shape about 1/4 inch thick.
  6. Place the dough on a preheated skillet or baking sheet. Bake at 425°F (220°C) for 5-7 minutes for the first sear.
