Ingredients:
- 12 oz fresh cranberries
- 0.5 cup pure maple syrup
- 0.5 cup water
- 0.5 cup freshly squeezed orange juice
- 1 tbsp fresh orange zest
- 1 cinnamon stick
- 0.25 tsp salt
Instructions:
- Rinse your berries. Place 12 oz (340g) cranberries in a colander and pick out any mushy or brown ones.
- Combine liquids. Add 0.5 cup (120ml) water, 0.5 cup (120ml) orange juice, and 0.5 cup (120ml) maple syrup to a medium saucepan.
- Add aromatics. Drop in 1 cinnamon stick, 1 tbsp orange zest, and 0.25 tsp salt.
- Dissolve and heat. Stir the mixture over medium heat until the syrup is fully incorporated and bubbles start to form.
- Introduce the fruit. Add the cleaned cranberries to the liquid.
- Simmer and pop. Cook for 10-12 minutes, stirring occasionally, until the cranberries burst and the liquid starts to thicken.
- Check the consistency. Drag your spoon through the bottom; if it leaves a trail for a split second, it's ready.
- Remove the spice. Take out the cinnamon stick and discard it.
- Cool it down. Transfer the sauce to a glass bowl. The sauce will continue to thicken as it reaches room temperature.
- Final chill. Cover and refrigerate for at least 2 hours before serving.
