Ingredients:
- 1/4 cup plain Greek yogurt
- 1 tbsp prepared horseradish
- 1 tsp lemon juice
- 1/4 tsp salt
- 1/4 tsp cracked black pepper
- 4 large whole wheat tortillas
- 1 lb lean deli roast beef, thinly sliced
- 4 slices provolone cheese
- 2 cups fresh baby spinach
- 1/2 cup shredded carrots
- 1/4 cup red onion, thinly sliced
Instructions:
- In a small mixing bowl, combine the Greek yogurt, horseradish, lemon juice, salt, and pepper. Whisk vigorously until the mixture is smooth and creamy.
- Slice red onions into thin half-moons. Wash and pat the baby spinach completely dry.
- Lay the tortillas flat. Spread 1 tablespoon of the horseradish mixture in the center, leaving a 1-inch border. Layer in order: cheese slice, roast beef, shredded carrots, red onion, and finally the baby spinach.
- Fold the sides of the tortilla inward, then roll from the bottom up, tucking the filling tightly and applying slight pressure to secure the wrap.
