Ingredients:

  • 1/4 cup plain Greek yogurt
  • 1 tbsp prepared horseradish
  • 1 tsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp cracked black pepper
  • 4 large whole wheat tortillas
  • 1 lb lean deli roast beef, thinly sliced
  • 4 slices provolone cheese
  • 2 cups fresh baby spinach
  • 1/2 cup shredded carrots
  • 1/4 cup red onion, thinly sliced

Instructions:

  1. In a small mixing bowl, combine the Greek yogurt, horseradish, lemon juice, salt, and pepper. Whisk vigorously until the mixture is smooth and creamy.
  2. Slice red onions into thin half-moons. Wash and pat the baby spinach completely dry.
  3. Lay the tortillas flat. Spread 1 tablespoon of the horseradish mixture in the center, leaving a 1-inch border. Layer in order: cheese slice, roast beef, shredded carrots, red onion, and finally the baby spinach.
  4. Fold the sides of the tortilla inward, then roll from the bottom up, tucking the filling tightly and applying slight pressure to secure the wrap.
