Ingredients:

  • 2 lbs fresh green beans, trimmed and halved
  • 2 tbsp kosher salt
  • 4 cups ice cubes
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk, room temperature
  • 1/2 cup heavy cream
  • 3 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1/2 tsp soy sauce
  • 1/2 tsp ground black pepper
  • 1/4 tsp freshly grated nutmeg
  • 6 oz French fried onions
  • 1/2 cup freshly grated Parmesan cheese

Instructions:

  1. Bring a large pot of water to a rolling boil and add the kosher salt.
  2. Submerge the green beans in the boiling water for 7 minutes until bright green and crisp-tender.
  3. Immediately transfer the beans to a large bowl filled with ice water to stop the cooking process. Once cold, drain and pat completely dry.
  4. In a 12-inch heavy-bottomed skillet or saucepan, melt the butter over medium heat.
