Ingredients:
- 1.5 cups (190g) Gluten-free 1:1 baking flour
- 0.5 cup (50g) Super-fine almond flour
- 1 tsp (5g) Baking soda
- 0.5 tsp (3g) Baking powder
- 1.5 tsp (4g) Ground cinnamon
- 0.5 tsp (1g) Ground nutmeg
- 0.25 tsp (1.5g) Fine sea salt
- 0.5 cup (115g) Unsalted butter, softened
- 0.75 cup (150g) Coconut sugar
- 2 Large eggs
- 1 tsp (5ml) Pure vanilla extract
- 1 tbsp (15ml) Apple cider vinegar
- 1 cup (120g) Finely grated zucchini, squeezed dry
- 1 cup (110g) Finely grated carrots
- 0.5 cup (60g) Chopped walnuts
- 0.33 cup (50g) Raisins
Instructions:
- Grate the zucchini and carrots. Use the small holes on your box grater for the carrots so they melt into the batter.
- Squeeze the zucchini. Place the grated zucchini in a clean kitchen towel and press firmly over the sink. Serious Eats' testing shows that draining zucchini prevents a gummy crumb, so don't skip this.
- Cream the butter and sugar. In a large bowl, beat the softened butter and coconut sugar until light and fluffy.
- Add the eggs. Beat in the eggs one at a time, ensuring each one is fully incorporated before adding the next.
- Stir in liquids. Mix in the vanilla extract and apple cider vinegar until the mixture is smooth and velvety.
- Mix dry ingredients. In a separate bowl, whisk together the GF flour, almond flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Combine wet and dry. Gently fold the flour mixture into the butter mixture. Stop as soon as you see no more streaks of flour.
- Fold in produce. Stir in the squeezed zucchini, grated carrots, walnuts, and raisins.
- Bake the loaf. Pour batter into a greased pan and bake at 350°F (180°C) for 50 minutes until a toothpick comes out clean. You'll smell a deep, spicy aroma filling the kitchen around the 40 minute mark.
