Ingredients:
- 1 large egg yolk
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon ground white pepper
- 1 clove garlic, minced
- 1/2 cup (120 ml) neutral oil (canola, sunflower, grapeseed)
- 1-2 tablespoons olive oil (optional)
Instructions:
- In a bowl or jar, whisk together egg yolk, lemon juice, Dijon mustard, salt, and pepper.
- Stir in the minced garlic until evenly distributed.
- Very slowly drizzle in the neutral oil, whisking constantly until emulsified. Add olive oil at the end if desired.
- Alternatively, use an immersion blender: place all ingredients in a jar, blend at the bottom until pale and creamy, then slowly lift to incorporate remaining oil.
- Taste and adjust seasoning as needed.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld and mayonnaise to thicken.
