Ingredients:

  • 1 large egg yolk
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1 clove garlic, minced
  • 1/2 cup (120 ml) neutral oil (canola, sunflower, grapeseed)
  • 1-2 tablespoons olive oil (optional)

Instructions:

  1. In a bowl or jar, whisk together egg yolk, lemon juice, Dijon mustard, salt, and pepper.
  2. Stir in the minced garlic until evenly distributed.
  3. Very slowly drizzle in the neutral oil, whisking constantly until emulsified. Add olive oil at the end if desired.
  4. Alternatively, use an immersion blender: place all ingredients in a jar, blend at the bottom until pale and creamy, then slowly lift to incorporate remaining oil.
  5. Taste and adjust seasoning as needed.
  6. Cover and refrigerate for at least 30 minutes to allow flavors to meld and mayonnaise to thicken.
