Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 tablespoons (57g) unsalted butter
- 6 cloves garlic, minced
- 1/4 cup (60ml) chicken broth
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 tablespoon lemon juice
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons chopped fresh parsley
Instructions:
- Cube the chicken and season it with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through (internal temperature reaches 165°F/74°C). Remove chicken from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant (about 30 seconds). Be careful not to burn the garlic!
- Pour in the chicken broth, honey, soy sauce, lemon juice, and red pepper flakes (if using). Bring to a simmer and cook for 2-3 minutes, or until slightly thickened.
- Add the cooked chicken back to the skillet and toss to coat evenly with the garlic butter sauce.
- Garnish with fresh parsley and serve immediately.
