Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons (57g) unsalted butter
  • 6 cloves garlic, minced
  • 1/4 cup (60ml) chicken broth
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley

Instructions:

  1. Cube the chicken and season it with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through (internal temperature reaches 165°F/74°C). Remove chicken from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant (about 30 seconds). Be careful not to burn the garlic!
  4. Pour in the chicken broth, honey, soy sauce, lemon juice, and red pepper flakes (if using). Bring to a simmer and cook for 2-3 minutes, or until slightly thickened.
  5. Add the cooked chicken back to the skillet and toss to coat evenly with the garlic butter sauce.
  6. Garnish with fresh parsley and serve immediately.
