Ingredients:

  • 4 tbsp (55g) unsalted butter
  • 2 tbsp (16g) cornstarch or arrowroot powder
  • 2 cups (480ml) whole milk, room temperature
  • 8 oz (225g) sharp cheddar, freshly grated
  • 8 oz (225g) Monterey Jack, freshly grated
  • 1/4 tsp (1.5g) garlic powder
  • 1/4 tsp (1.5g) smoked paprika
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Melt the butter over medium low heat. Wait until it bubbles gently before moving to the next step.
  2. Whisk in the cornstarch or arrowroot powder. Cook for 1 minute Note: This removes the raw starch taste.
  3. Gradually pour in the room temperature milk. Whisk constantly until the mixture thickens and reaches a gentle simmer.
  4. Reduce the heat to low. This is the most important part to avoid graininess.
  5. Add the sharp cheddar one handful at a time. Stir in a figure eight motion until the cheese disappears into the sauce.
  6. Add the Monterey Jack in small batches. Stir until the dip looks glossy and moves as one cohesive mass.
  7. Stir in the garlic powder, smoked paprika, salt, and pepper.
  8. Remove from heat immediately once the cheese is fully melted. The residual heat will finish the job.
