Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 2 tsp (10ml) vanilla extract
- 1/2 cup (45g) cocoa powder
- 1 cup (170g) semi-sweet chocolate chips
- 2 oz (60g) melted dark chocolate
- 1 cup (125g) all-purpose flour
- 1/2 tsp (2g) baking powder
- 1/4 tsp (1.5g) salt
Instructions:
- Cream together the softened butter and granulated sugar using a mixer on medium-high for 2-3 minutes until the mixture is pale, fluffy, and slightly aerated.
- Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Sift in the cocoa powder, all-purpose flour, baking powder, and salt; fold into the wet ingredients.
- Fold in the melted dark chocolate and semi-sweet chocolate chips until the batter is thick, glossy, and mahogany-colored.
- Scoop approximately 2 tablespoons of dough per cookie onto a baking sheet lined with parchment paper or silicone mats.
- Bake for 13 minutes until the edges are set and the tops have a shiny, crackled finish.
