Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 2 tsp (10ml) vanilla extract
  • 1/2 cup (45g) cocoa powder
  • 1 cup (170g) semi-sweet chocolate chips
  • 2 oz (60g) melted dark chocolate
  • 1 cup (125g) all-purpose flour
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1.5g) salt

Instructions:

  1. Cream together the softened butter and granulated sugar using a mixer on medium-high for 2-3 minutes until the mixture is pale, fluffy, and slightly aerated.
  2. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  3. Sift in the cocoa powder, all-purpose flour, baking powder, and salt; fold into the wet ingredients.
  4. Fold in the melted dark chocolate and semi-sweet chocolate chips until the batter is thick, glossy, and mahogany-colored.
  5. Scoop approximately 2 tablespoons of dough per cookie onto a baking sheet lined with parchment paper or silicone mats.
  6. Bake for 13 minutes until the edges are set and the tops have a shiny, crackled finish.
