Ingredients:

  • 2 large Granny Smith apples (approx. 1 lb / 450g)
  • 1 tbsp lemon juice
  • 1 cup all-purpose flour
  • 1 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup whole milk
  • 1 large egg
  • 1/2 cup granulated sugar
  • 2 tbsp ground cinnamon

Instructions:

  1. Core the apples and slice them into 1/2-inch thick rings. Toss them gently in lemon juice to prevent oxidation, then pat them completely dry with paper towels to ensure the batter adheres.
  2. In a mixing bowl, whisk together the flour, 1 tablespoon of sugar, baking powder, and salt. Beat in the egg and milk until the mixture is smooth and velvety, taking care not to overmix.
  3. For deep frying: Heat 2-3 inches of oil to 350°F (175°C). Dunk each ring in batter, let excess drip off, and fry for 2-3 minutes per side until mahogany-colored. For air frying: Preheat to 375°F (190°C), dip rings in batter, place in a single layer in the basket, spray with oil, and cook for 8-10 minutes, flipping halfway through.
  4. Immediately transfer hot rings to a mixture of 1/2 cup sugar and 2 tablespoons of cinnamon. Roll quickly to coat while the residual oil is wet.
  5. Transfer the coated rings to a wire cooling rack to maintain crispness and prevent sogginess.
