Ingredients:
- 1 lb English cucumber, thinly sliced
- 1/2 cup red onion, thinly slivered
- 1/2 tsp kosher salt
- 3 tbsp extra virgin olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1 clove garlic, minced
- 1/4 cup fresh dill, chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh mint, finely torn
- 1/4 tsp black pepper
Instructions:
- Slice the cucumbers into thin rounds and place them in a colander. Sprinkle with kosher salt and let them sit for 10-15 minutes to draw out excess moisture. Gently pat dry with a paper towel.
- In a small jar or bowl, whisk together the olive oil, apple cider vinegar, honey, and minced garlic until emulsified. Stir in the chopped fresh dill, parsley, and mint.
- Combine the drained cucumbers and slivered red onions in a large mixing bowl. Pour the herby vinaigrette over the top and toss gently until coated.
- Cover the salad and refrigerate for 20 minutes to allow the flavors to marry before serving.
