Ingredients:

  • 1 lb English cucumber, thinly sliced
  • 1/2 cup red onion, thinly slivered
  • 1/2 tsp kosher salt
  • 3 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 clove garlic, minced
  • 1/4 cup fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh mint, finely torn
  • 1/4 tsp black pepper

Instructions:

  1. Slice the cucumbers into thin rounds and place them in a colander. Sprinkle with kosher salt and let them sit for 10-15 minutes to draw out excess moisture. Gently pat dry with a paper towel.
  2. In a small jar or bowl, whisk together the olive oil, apple cider vinegar, honey, and minced garlic until emulsified. Stir in the chopped fresh dill, parsley, and mint.
  3. Combine the drained cucumbers and slivered red onions in a large mixing bowl. Pour the herby vinaigrette over the top and toss gently until coated.
  4. Cover the salad and refrigerate for 20 minutes to allow the flavors to marry before serving.
